
Cavatelli is the universal pasta for all sauces. Many times, specific pasta can only be used with specific sauces. For instance, capellini can only be used with a light tomato and/or olive oil sauces, whereas bucatini (a thicker spaghetti) can hold up to meat sauces and ragus. Cavatelli can hold up to all of them, making it the GOAT of all pastas, and my personal favorite.
Serves 2 (4 oz portions)
Kit Includes:
- 8 oz cavatelli dough
- 1/2 cup flour
- 12 tbsps unsalted butter
- 2 tbsps cracked black pepper
- 1 1/2 cups cheese stock
- 4 oz pecorino
- 2 tbsps oz kosher salt
- 1 cavatelli maker
- 1 microplane
Pasta: flour, egg, ricotta, milk, salt.
Cheese Stock: parmesan, pecorino, locatelli, water.
Refrigerate immediately upon arrival.
